1. Prime Rib Roast with Garlic and Rosemary
Ingredients:
- 1 bone-in prime rib roast (about 5-7 pounds)
- 6 cloves of garlic, minced
- 2 tablespoons fresh rosemary, chopped
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1 cup beef broth
Instructions:
- Preheat the oven to 450°F (230°C).
- In a small bowl, mix together minced garlic, rosemary, salt, black pepper, and olive oil to create a paste.
- Rub the garlic and rosemary paste all over the surface of the prime rib, ensuring it's evenly distributed.
- Place the seasoned roast in a roasting pan with the fat side up.
- Pour beef broth into the bottom of the pan to keep the meat moist during cooking.
- Roast the prime rib at 450°F for 15 minutes to sear the outside, then reduce the temperature to 325°F (165°C).
- Continue roasting until the internal temperature reaches your desired level of doneness (use a meat thermometer), approximately 15-20 minutes per pound for medium-rare.
- Allow the roast to rest for 15-20 minutes before carving. This allows the juices to redistribute and keeps the meat juicy.
2. Beef Tenderloin with Red Wine Reduction
Ingredients:
- 2 to 3 pounds beef tenderloin, trimmed
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1 cup red wine
- 1 cup beef broth
- 2 tablespoons unsalted butter
Instructions:
- Preheat the oven to 400°F (200°C).
- Season the beef tenderloin with salt and pepper.
- Heat olive oil in an ovenproof skillet over medium-high heat.
- Sear the beef on all sides until browned.
- Transfer the skillet to the preheated oven and roast for about 20-25 minutes for medium-rare, or until the desired doneness is reached.
- Remove the beef from the skillet and let it rest while making the sauce.
- Place the skillet back on the stovetop over medium heat. Pour in the red wine and beef broth, scraping the bottom of the skillet to incorporate the flavorful bits.
- Simmer the liquid until it's reduced by half. Stir in butter until the sauce is smooth and glossy.
- Slice the beef tenderloin and serve with the red wine reduction sauce drizzled over the top.
